Squidgy Oatmeal Cookies

Ingredients | Approx 6 large cookies 

1 cup rolled oats

1 cup oat flour (or almond flour)

½ tsp baking soda

1 tsp cinnamon

Pinch sea salt 

1 tbsp flaxseeds 

1 ripe banana, mashed 


½ cup maple syrup

1 egg 

¼ cup coconut oil 

1 tsp vanilla extract

1 bar dark chocolate, roughly chopped (I used lindt dark choc with a touch of sea salt)

Method

  1. Preheat oven  (170°C). Line a baking sheet with parchment paper.

  2. In a bowl, combine oats, oat flour, baking soda, cinnamon, salt, and flaxseeds

  3. In another bowl, stir mashed banana, maple syrup, coconut oil, and vanilla extract.

  4. Add the wet ingredients into the dry and mix until just combined. Stir in chocolate chips

  5. Drop 1 ½ tablespoon-sized dough balls onto the baking sheet and flatten slightly.

  6. Bake for 8-9 minutes, until just going golden

  7. Let cool for a few minutes before transferring to a wire rack.
